EPISODE 4 – ELIZABETHAN RECIPES
In the latest episode of Bard Around Town, Max was having car trouble so couldn’t actually go around town! Instead, he was joined in the kitchen by Bard staff members Alva and Jocelyn to experiment with some Elizabethan recipes.

- LIMON CAKES
Ingredients:
2 1/2 cups flour, plus more as needed
2 cups granulated sugar
6 tablespoons unsalted butter
Grated zest from 2 lemons
1 egg
2 egg yolks
1/3 cup confectioners’ sugar
1 1/2 teaspoons milk
2. TURNIPS
Ingredients:
1 lb turnips (5 little)
10 oz cheddar cheese
2 T butter
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp pepper
3. FRITTERS
Ingredients:
1 1/2 cups all purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/3 cup milk
2 eggs
3 tablespoons applesauce
2 large Granny Smith or Honey Crisp apples peeled, cored and diced
canola oil for frying
GLAZE
2 cups powdered sugar
1/4 cup milk
1/2 teaspoon vanilla
4. SALMON
Ingredients:
500g salmon fillets
3 sticks rosemary
500mL water
Small bunch of thyme
500mL quality mid-strength beer
30mL wine vinegar
